Description
Medium lemon color with yellow-brown hay hues, and a clean nose of lemon blossoms, with piquant spices and herbs, citrus and some white-fleshed fruit, the essence of brioche bread and fresh cut grass.
High acidity in the mouth and a medium volume in the body, dominated by citrus and floral white-fleshed fruit and spicy minerality. Very pleasant aftertaste with mineral, lemony and spicy characteristics and some green fruit.

Food Pairing
Try it with seafood and fish, such as grilled white seabream and spaghetti alla vongole.
Extra tip: Assyrtiko. tonnato vitello and chicken with peppers..

TThis vineyard is named ASVESTARIA (LIMESTONE) inspired by the soil underneath that has limestone. Historically, the location was used as a place for the extraction of limestone for the production of plaster for construction use. In 2006, the first vine stocks of Assyrtiko are planted.

Classic white vinification using selected yeast strains ideal for the Assyrtiko variety. The wine matures in stainless steel tanks on its fine lees for at least six months. It shows great aging potential.
