The vineyard named Galanos was planted in 2008 with the Sauvignon Blanc variety. It is located 2 km away from the sea and is surrounded by the massifs of Mount Symvolo. The planting density is 300 plants per acre and the yield is 3.5 kg per plant. The soil is composed of clay and the temperatures are particularly low during the night as the vineyard is in the shade since the early afternoon.
Classic white vinification with fermentation at very low temperatures and selected yeasts. Wine storage in stainless steel tanks for 4 months on selected wine lees.
